When Paul “Yoda” Iskov left Australia to work in some of the world’s most celebrated kitchens—Amuse in Perth, Noma in Copenhagen, DOM in São Paulo and Pujol in Mexico City—he was chasing inspiration. What he found was a mirror reflecting the richness of his own homeland. “Many of the kitchens I worked in shared a common thread; they celebrated local ingredients, particularly those native to where they were based,” Yoda says. “Although the places I worked in Australia inspired me, my time abroad made me think more deeply about what we had here at home.
